½ (15-oz.) pkg. Hy-Vee ready-to-bake 9-inch pie crust, (1 crust)
2 c. Hy-Vee shredded gouda cheese, divided
1 medium sweet potato, peeled and thinly sliced
Hy-Vee salt, to taste
1 c. cooked ham, chopped into bite-sized pieces
Fresh thyme, for garnish

  • Vegetable peeler
  • Hy-Vee nonstick cooking spray
  • Aluminum foil

Directions

  1. Preheat oven to 425 degrees. Line a baking sheet with parchment paper. Place pie pastry on center of baking sheet; set aside. 

  2. Sprinkle 1/4 cup of shredded Gouda 1/2-inch edge of pie pastry. Place a layer of thinly sliced sweet potatoes on top of cheese; season with salt; repeat layers 2 more times finishing with a layer of cheese. Fold uncovered pie crust up over filling, pleating as necessary. Spray pie crust with nonstick cooking spray. 

  3. Bake 25 minutes; if necessary, cover with aluminum foil to prevent over-browning. Remove from oven; top with ham and 1/2 cup shredded cheese. Bake additional 10 minutes or until cheese is melted and crust is golden brown. Remove from oven; garnish with fresh thyme, if desired.
